Golden Multi-grain Panacakes

And the best part is, we have all of these leftover for breakfast in the morning.
Too bad there was no bacon left!

Golden Multi-grain Panacakes (No misspelling here, that's what Abigail calls them!)

3/4 c. whole wheat flour
1 c. all-purpose flour
1/4 c. cornmeal
1/2 c. old-fashioned oats
1/4 c. wheat germ
1/2 c. almonds
1/2 c. walnuts
1/2 c. pecans
1 tablespoon baking powder
2 c. reduced fat buttermilk
2 eggs
1 1/2 tablespoons honey
1 tablespoon vegetable oil
non-stick cooking spray

In a mixing bowl, combine flours, cornmeal, oats, wheat germ, nuts, and baking powder. In a separate bowl, combine buttermilk, eggs, honey, and vegetable oil. Stir until smooth. Add wet ingredients to dry ingredients, stirring until a smooth batter forms. Spray a griddle or skillet with non-stick cooking spray. Cook over medium heat in skillet, or 350 on griddle. Pour 1/4 c. batter for each panacake ;0) onto the hot griddle. When bubbles form and pop, flip panacake
over with spatula and cook the other side for an additional minute. Serve immediately with butter and syrup! (I hold my in a 200 degree oven until they are all done so that we may all eat together.

This is a very HEARTY recipe. I make three batches at once. We have seven very big eaters, and still have lots of leftovers. This is also a diabetes- friendly recipe.
