Kielbasa Cabbage Skillet


2 lbs. fully cooked kielbasa or Polish sausage, cut into 1/2 inch slices
8 Tbls. butter, divided
1 large head cabbage, coarsely chopped
2-3 medium onions, chopped
1 29 oz. can tomato sauce
2 Tbls. sugar
1 Tbls. paprika
4-5 large potatoes, peeled and cubed

In a large deep skillet or Dutch oven, brown the sausage in 4 Tbls. butter; remove and set aside.
In the same pan, saute the cabbage and onions in the remaining butter until tender. Combine the tomato sauce, paprika, and sugar; pour over the cabbage mixture. Bring to a boil. Add the potatoes, and reduce heat. Cover and simmer for 30 minutes, until potatoes are tender. Add the reserved sausage. Cover and simmer 10 minutes longer until the sausage is heated through.
Yields 8-10 servings.
