Cherry Squares
Cherry Squares
1 cup margarine
1 1/2 c. sugar
4 eggs
2 c. flour
1 tsp. vanilla
1 tsp. lemon or orange extract
1 can cherry pie filling
Preheat oven to 350. Cream butter and sugar. Add eggs, and beat well. Mix in extracts and flour. Blend well. Grease a 9 x 13 pan. Pour batter into prepared pan. Level batter. Score batter with a butter knife, making 24 squares. On each square, place 3 cherries. The batter will bake up around this. Bake for 38-40 minutes, until set. Let cool. Cut into 24 squares, and sprinkle with powdered sugar. This is a delicious cake-like recipe. You may substitute blueberry pie filling.

I made these last night and they turned out just like your picture! :) After I scored them, I thought, "Oh no, are 3 cherries going to fit on each square???" They sure did! And it baked up so pretty! My FIL loves anything cherry so I am excited to serve this to him today when he visits.
