Zucchini Bread


3 eggs
2 c. sugar
1c. vegetable oil
2 tsp. vanilla
3 c. flour
2 c. grated raw zucchini
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 c. chopped nuts or raisins (optional)

Preheat oven to 350 F. Beat eggs until fluffy. Add sugar, oil, zucchini, and vanilla.
Mix lightly, but well. Combine dry ingredients in separate bowl; add to wet mixture. Stir until well blended. Stir in nuts or raisins. Pour into 2 greased 9x5 inch bread ans. Bake for 55 - 60 minutes, or until toothpick inserted in center comes out clean. Cool on wire rack for a few minutes before removing from the pan.
