Derby Pie
Derby Pie
2 eggs
1/2 c. flour
1/2 c. sugar
1/2 c. brown sugar
3/4 c. softened butter
1 c. chopped walnuts
1 c. semi-sweet chocolate chips
9" unbaked pie shell
Preheat oven to 325 F. In a large bowl, beat eggs until foamy. Beat in flour, sugar and brown sugar. Beat in softened butter. Stir in walnuts and chocolate chips. Pour into unbaked pie shell. Bake 55-60 minutes or until knife inserted halfway between edge and center comes out clean, and top is golden brown. Cool on wire rack.

Love this pie!! I searched for a few years for a recipe and found one from my mother in law that is so similar to this. My calls for vanilla but does not have the walnuts in it. I'll be trying this one.
There is a Brethren Disaster Relief Auction in our area every Fall and I would buy one of these pies up there. Except, now they can't sell them b/c they can't be refrigerated. I was desperate for a recipe, lol!!
Since moving here, we have found out that this is a KY tradition! :) Our third child arrived on Easter weekend this year, and our church arranged meals for us. The woman bringing dinner the night of the Derby also brought us this pie - delicious! :) Good thing I am nursing and can spare a few calories, ha ha ha! :)
