Linguine with Salmon Sauce

Yes, this sounds a little strange, but oh is it ever delicious! And did I mention, easy? Seriously, 15 minutes is all it takes! This is a real crowd pleaser.


Linguine with Salmon Sauce

2 cloves garlic, minced
1/4 c. butter
1/4 c. olive oil
1 tsp. coarsely cracked pepper
1 can salmon
clam juice
lemon juice
1 pound linguine, or thin spaghetti, cooked
2 Tbls. chopped parsley

Saute garlic in butter and olive oil until lightly browned ; add pepper. Measure 1/3 cup lemon juice , and 2/3 cup clam juice into measuring cup. Drain liquid from salmon. Flake salmon; add with liquids to garlic mixture. Bring to simmer; just before serving over linguine, stir in parsley.
I double this for our family of seven.
