Schoolhouse Thai Beef and Rice

Anna, from Pleasant View Schoolhouse generously allowed me to post this fabulous recipe here. It's mild and delicious. And oh, so easy!


•Schoolhouse Thai Beef and Rice•

In a large skillet, saute:
1 lb. ground round and
1 chopped onion.

When almost done, add:
2 minced garlic cloves
red pepper flakes to taste. I use about 1/2 t.
4 carrots, thinly sliced.

Add:
2 c. jasmine rice
1 can coconut milk, regular or light
enough water, to equal 4 cups of liquid total
1/4 c. tamari sauce.

Bring to a boil, then cover and simmer over low heat until liquid is absorbed and rice is tender. Serve with crushed dry-roasted peanuts, and a squeeze of lime. Cilantro, too, if you're a fan.

Anna says, "Feeds about 8 people generously." My thoughts? Which 8 people? We're a family of big eaters. I used 2 lb. ground round, 1 chopped onion, 3 minced garlic cloves, 3/4 tsp. crushed red pepper flakes, 3 cups jasmine rice, 2 cans coconut milk and enough water to make 6 cups liquid, and between 1/3 and 1/2 c. tamari sauce. It fed six of us, and there's enough left for someone's lunch. Granted, several of us had two plates, while one of us had three plates! Had my boys been home, it would have all gone, easily!
