Zucchini Quiche


Zucchini Quiche

3 cups of shredded zucchini
1 cup of Bisquick
4 eggs
1/2 cup of grated cheese
1/4 cup of oil
Salt, pepper, oregano & parsley to taste

Mix all ingredients together. Pour into 9 inch greased pie pan. Bake at 350ºF. for 45-50 minutes. May be garnished with chopped tomatoes and black olives.

*We double the recipe, and bake in a 9 x 13 pan for one hour.

If you've already posted this question from me, this is just a repeat in case the first didn't work for some reason...I just wanted to know if this recipe has a crust, like it mentions in the instructions. It wasn't mentioned in the ingredients and it doesn't look like it has a crust in the picture, but the instructions made me think I was missing something. Thank you again.

I'm sorry. No, there is not a crust. The instruction did say that there was. Thanks for pointing that out to me. I'm sure it was confusing!

Thank you, Tracy! This recipe is wonderful! I made it just as you posted here, but I added sliced green onions to the garnishes that you suggested. My husband and I really enjoyed it, and I mentioned it on my little blog site, too. Oh, and I also made the chocolate zucchini muffins with a slight adaption to the recipe. They were wonderful, too! Thank you for sharing your recipes on this blog and for helping our little family find delicious ways to use an abundance of garden produce. God's blessings to you and your family!
