Mayonnaise Cake

This recipe is one that I inherited from Grandma. She never made cake from a box .

2 cups flour
1 cup sugar
1/2 c baking cocoa
2 teaspoons vanilla
1 cup mayonnaise
1 cup water
1 egg
2 tsp. baking soda

Add all ingredients together in one bowl. Beat in baking soda last. Pour batter into a well greased 9 x 13 pan. Bake at 350 F for 35 minutes. If making cupcakes, divide into 24 cupcake tins. Bake at 400 F for 18-20 minutes.

I've never heard of Mayonnaise Cake and I'm intrigued. Hmmm.

What tip did you use to frost these cupcakes, I'd like to try it. I use a large star tip and put just a dollop on top with a little peak.

My mom always made mayonnaise cake while we were growing up. So many people have never even heard of it! It's neat to see someone else has enjoyed this delicious tradition through the years.

I made it this early afternoon, and it's simply delicious! The boys watched with horror-filled eyes as I added in the cup of mayonnaise, but after seeing what look like very normal-looking chocolate cupcakes, they're willing to forget what I put in it. :D

Yummy!! I love that all of the ingredients (except soda) go into the bowl at once, makes for a simple to put together cake!! Thanks for sharing.
