Roasted Garlic

Preheat the oven to 400 F.

Peel away the outer layers of the skin on the garlic bulb, making sure to leave the skin around the individual cloves. Using a sharp knife, cut off about 1/2 inch from the top of the cloves.

Place the garlic, cut side up into a muffin tin. Drizzle with olive oil.

Cover with aluminum foil, and bake for 30 -35 minutes.

Cool. Squeeze the roasted garlic cloves out of their skins. Eat as is, or use in desired recipes!

Hey Tracy, I've just come to your blog via Mama's Fixins when she posted your cinnamon roll recipe. Then I came to your main page. I'll be back very soon! You know what I started doing to roast garlic - I peel it, cut it into smaller pieces, put it in some tin foil, drizzle olive oil over it, close up the tin foil, and bake it at 350 for about half an hour. I find it so much easier than leaving the skins on and having to peel them off later. Lately, I've been putting it on baked potatoes. :<)
